Guiness Rib Eyes

Ingredients

  • 2 8oz rib eyes
  • 4 oz. Guinness stout, at room temperature
  • 2 garlic cloves, finely chopped
  • 1 oz. soy sauce
  • 1 Tbsp. Vidalia onion, finely chopped
  • 1 tsp. shallots, finely chopped
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1/4 tsp. each fresh tarragon and parsley, finely chopped
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt

Preparation

Step 1

Place garlic, shallots, onion, parsley and tarragon in a small bowl. Add the Worcestershire sauce, Dijon mustard, Guinness, soy sauce and seasonings, and mix well to combine. Let stand for 30 minutes to blend flavours.

Place the steaks in the marinade, coating them well.

Cover the bowl and place in the refrigerator for at least 30 minutes, or preferably overnight.

Preheat the grill and cook the steaks.

Reduce the remaining marinade in a small saucepan for one or two minutes until slightly thickened. Add more beer to the marinade if desired. Pour over the steak and serve.
