Ingredients
- Corn Starch
- salt
- fresh lemons
- 4 eggs

Preparation
Step 1
Boil 2 c water, 1 c sugar + 1/4 tsp salt
Stir 3 rounded tsp (heaping) Corn starch with 1/2c water..Boil until thick about (10-15 mintues) take it off the heat
Add 4 egg yolks,2tsp lemon rind & juice of 2 lemons,which have been mixed into a bowl with a wire wisk....Boil again(about 5- 10 mintues) or until bubbling and thick..Cool
Pour into a 9" iinch baked crust
Meringue:
4 egg whites with electric mixer with 8 tsp of sugar
slowly until white stiff peaks..
Baked 20 minutes until peaks of merningue are light tan
