Ingredients

  • 2 quart bean pot
  • 1 pound beans-navy beans or California pea beans or York state beans
  • 1/2 pound salt pork
  • 4 tablespoons sugar
  • 1/3 cup molasses
  • 1 teaspoon dry mustard
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 medium onion
  • 2 pork hawks or ham hawks

Step 1

Soak beans over night. In the morning parboil them for 10 minutes with 1/2 teaspoon baking soda. Then run cold water through the beans in a colander or strainer. Dice rind of salt pork in 1 inch squares cut in half. Put half on bottom of bean pot with whole onion. Put beans in pot. Put the rest of salt pork on top. Mix other ingredients with hot water. Pour over beans. Put 2 ham hawks on top of pork. Put in 300 degree over for 6 hours. Add water as necessary to keep the beans moist. Don't be impatient and flood the beans.
