I found this iHop Pancake recipe in a cookbook the other day called,"America's Most Wanted Recipes by Ron Douglas. They were deliciously sweet, light and fluffy...just like a good pancake should be!

Ingredients

  • 1 1/4 cups flour
  • 1 teaspoons baking powder
  • 1 teaspoons baking soda
  • Pinch of salt
  • 1 egg, beaten
  • 1 1/4 cup buttermilk
  • 2 tablespoons melted butter
  • 1/4 cups sugar

Preparation

Step 1

Stir together the flour, baking soda, baking powder and salt.

Mix the egg with the buttermilk and add to the flour mixture, stirring only until smooth.

Add the melted butter and sugar.

Fry on a greased griddle.
