Ingredients

  • 1 cup butter softened
  • 1 cup confectioner's sugar
  • 2 egg yolks, room temp
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 cup raspberry preserves

Preparation

Step 1

Cream butter and sugar until light and fluffy. Beat in the egg yolks and vanilla. Add flour and mix until well combined. Reserve 1/3 of dough and wrap in pastil until chilled approx half hour.
Press remaining dough on bottom and partially up sides of ungreased 9 x 13 baking pan. Spread jam over dough. Roll out the chilled dough. Cut into 1/2 inch wide strips. Place strips diagonally over the jam, arranging in one direction. Place remaining strips other direction for a diamond pattern.
Bake 350 degrees for 25 minutes or until lightly golden . Cut into 2" squares.
