Ingredients
- 1 Cup flour 4 Cups diced rhubarb
- ¾ Cup oatmeal 1 Cup white sugar
- 1 Cup brown sugar 2 ½ Tbsp cornstarch
- 1 tsp cinnamon 1 Cup water
- ½ Cup melted butter or margarine 1 tsp vanilla
Preparation
Step 1
Mix flour, oatmeal, brown sugar, cinnamon, and melted butter until crumbly. Press half of the mixture in a greased 9” square pan. Combine sugar, cornstarch vanilla and water in a saucepan. Cook over low heat, stirring constantly, until thick and clear. Stir in rhubarb and pour fruit mixture over the bottom crust. Top with remaining crumbled mixture. Bake at 350 degrees for 50-60 minutes.
