  • 1 ripe Mango, peeled, seeded and chopped
  • 1/2 C chopped plum tomatoes
  • 1/2 C chopped red bell peppers
  • 1/2 C chopped purple onion
  • 1 Tbsp minced garlic
  • 1 1/2 Tsp minced Jalapeno pepper
  • 1 Tsp ground cumin
  • 1 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1/4 C fresh lime juice
  • 1/4 Tsp pepper
  • 1/2 Tsp hot sauce
  • 1/2 C chopped fresh cilantro
  • 1/2 Tsp salt

Combine all ingredients. Refrigerate up to 3 days. Yield: 2 1/2 cups.
