Cheesebuger Soup

Ingredients

  • 2 lb ground beef
  • 1 large onion chopped
  • 16 oz sliced carrots
  • 3 stalks diced celery
  • 2 teaspoon dried basil
  • 2 teaspoon dryed parsley flakes
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 6 large potatoes diced
  • 1 cup flour
  • 32 oz velveeta cheese
  • 1/2 gallon milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream

Preparation

Step 1

in a 3 quart sauce pan brown beef, put in crock pot. in same sauce pan saute onions, carrots, celery, basil, and parsley in 1 tablespoon butter until vegetalbes are tender about 10 minutes. add broth, potatoes and bring to a boil. transfer to crock pot cook on low until potatoes are tender.
Meanwhile in a small skillet melt remaining butter, add flour, cook until bubbly stiring constantly 3 to 5 minutes.
Add to soup, Add cheese, milk, salt and pepper.
cook until cheese is melted
