Oven-Roasted Home Fries

Ingredients

  • 2 lbs. Red New Potatoes, scrubbed & cut into 3/4-in. chunks
  • 1 Lg. Onion, chopped
  • 1 Red or Green Bell Pepper, chopped
  • 3/4 tsp. Dried Rosemary
  • 2 Tbsp. Olive Oil
  • Salt & Freshly Ground Black Pepper

Preparation

Step 1

Preheat oven to 350. On a lg. baking sheet, combine potatoes, onion, peppers, rosemary & oil; season with salt & pepper. Toss till vegetables are coated with oil; bake till tender, about 1 hr. Serve.
