Ingredients
- Cookies:
- 1-1/4 cups flour
- 1/2 cup cornstarch
- 1/3 cup powdered sugar
- 3/4 cup butter, softened
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- Frosting:
- 3/4 cup powdered sugar
- 1/4 cup butter, softened
- 1 teaspoon grated lemon peel
- 1 teaspoon lemon juice

Preparation
Step 1
1. In a large mixing bowl, combine all cookie ingredients.
2. Beat at low speed, scraping bowl often, until well mixed, 2 to 3 minutes.
3. Divide dough in half.
4. Shape each half into a 8" x 1" roll.
5. Wrap in plastic and refrigerate until firm, 1 to 2 hours.
6. Heat oven to 350 degrees F.
7. With sharp knife, cut each half into 1/4" slices.
8. Place 2" apart on cookie sheets.
9. Bake for 8 to 12 minutes or until set; cool completely.
10. In small mixer bowl, combine all frosting ingredients.
11. Beat at medium speed, scraping bowl often, until fluffy, 1 to 2 minutes.
12. Frost cooled cookies.
