Irish Dark Chocolate Mousse
Real Cream and dark chocolate, spiked with Irish cream, are a match made in heaven. For the final touch, garnish this very decadent but easy to prepare dessert, with softly whipped cream, fresh berries or shaved chocolate. Your guests will think you spent hours making this creamy delight but only you'll know how easy it is to make.
- 3.5 oz (100 g) bittersweet (dark) chocolate, chopped
- 2 tbsp (30 mL) Irish cream
- 1-1/4 cup (300 mL) 35% Whipping Cream, divided

In a heatproof bowl, set over a saucepan of simmering water, melt chocolate. Remove from heat. Add Irish cream and ¼ cup (50 mL) cream and stir until smooth; set aside.
In a chilled bowl, whip remaining cream until firm peaks form; fold into cooled chocolate mixture. Divide into dessert cups, cover and refrigerate for at least 2 hours or up to one day.
