Irish Dark Chocolate Mousse

Real Cream and dark chocolate, spiked with Irish cream, are a match made in heaven. Ingredients

  • 3.5

    oz (100 g) bittersweet (dark) chocolate, chopped

  • 2

    tbsp (30 mL) Irish cream

  • 1-1/4

    cup (300 mL) 35% Whipping Cream, divided

Directions

In a heatproof bowl, set over a saucepan of simmering water, melt chocolate. Remove from heat. Add Irish cream and ΒΌ cup (50 mL) cream and stir until smooth; set aside. In a chilled bowl, whip remaining cream until firm peaks form; fold into cooled chocolate mixture. Divide into dessert cups, cover and refrigerate for at least 2 hours or up to one day.
