Bucatini Bolognese

Ingredients

  • 1 lb ground beef
  • 10 ounces bucatini pasta
  • 1- 8 ounce can tomato sauce
  • 4 cloves garlic, chopped
  • 4 ounces brussels sprouts, chop off ends and cut in half, reserving leaves
  • 1 carrot, diced
  • 1 yellow onion, diced
  • 1 bunch basil
  • 3 tbls butter
  • 1/2 cup grated pecorino cheese

Preparation

Step 1

Heat oil in pan until hot. Add garlic, carrot and onion; season with salt and pepper. Cook until softened. Add the ground beef. Cook until browned. Add the tomato sauce and 1 cup of water to pan. Bring to simmer and then reduce heat to low, stirring occasionally. Meanwhile, cook pasta according to directions. Reserve 1 cup of pasta cooking water before draining pasta. Add cooked pasta to sauce. Add butter, brussel sprouts, half the basil and half the cooking water. Stir vigourously to coat the pasta, 2-3 minutes until combined. Add more cooking water if sauce seems dry. Season with salt and peppper to taste. Serve with cheese and rest of basil.
