tbsp Olive Oil
cup chopped onions ¼ tsp pepper 1 garlic clove, minced 3 cups flour
tsp baking powder 1 tsp salt
cup Monterey Jack cheese
(12oz) bottle of lager beer
tbs melted butter - divided Cooking Spray
Preheat oven to 375 degrees. Heat oil in a small pan, add onion and saute til browned. Stir in pepper and garlic. Combine flour, sugar baking powder & salt in a large bowl, stir with a whisk: make a well in center and add onion mix, cheese, and beer to flour mix, stirring til just moist. Spoon batter into a greased 9x5 loaf pan. Drizzle 1 tblsp butter over batter. Bake for 35 min. Drizzle remaining butter over batter and bake an additional 25 minutes until a deep golden brown or when knife inserted in center comes out clean. Remove from pan and cool completely.
