Mediterranean Meatloaf 1 Picture


  • Oven 400*
  • 1 lb ground pork
  • 1 lb ground beef, I used bison
  • 4-5 oz prosciutto, sliced medium
  • 1/2 cup parmesan cheese
  • 1/2 cup bread crumbs
  • 2 eggs
  • 2 tsp minced garlic
  • 1/4 cup grated onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 3/4 tsp salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 tsp cayenne or paprika
  • 1/4 tsp ground cardamom
  • 2-3 Tbsp chopped almonds or cashews
  • 3/4 cup dry white or red wine

Preparation time 15mins
Cooking time 60mins


Step 1

In large bowl, combine everything except prosciutto and wine. Let sit in fridge for 3-6 hours or overnight.
Grease 10X12 with olive oil. Form meat into meatloaf and wrap prosciutto around so that meat is covered entirely. Bake uncovered 15 minutes then add wine in dish and bake another 30 minutes. Check meat prior to end of last 30 minutes to make sure prosciutto not getting too well done. If it looks like getting too done, cover dish with foil to finish cooking. Remove from oven and let stand for 15 minutes.

Note: You do not have to add nuts or every herb to have it taste really good…Enjoy!!!
