Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup butter, softened
  • 1/4 cup chopped peanuts
  • 1/2 tsp vanilla
  • 2 cups icing sugar
  • 2 cups semisweet chocolate chips
  • 1 tbsp plus 1 tsp shortening

Step 1

Line 8x8x2 pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. Grease foil with butter. Mix peanut butter, butter, peanuts and vanilla. Stir in icing sugar, 1/2 cup at a time, until stiff. Pat mixture into pan.

Cover and refrigerate 1 hr. until firm. Remove from pan using foil edges to lift. Cut into 8 rows by 8 rows. Melt chocolate and shortening over low heat, stirring constantly. Dip peanut butter squares into chocolate mixture.

Place on cookie sheet. Refrigerate 30 min. Drizzle icing on top. (1/2 cup icing sugar, 2 tbsp peanut butter, 1 tbsp milk)
