Poblano Caesar Dressing

Ingredients

• 1/4 tsp salt
• 1 Poblano chile, roasted, peeled and seeded, or 1 canned poblano chile
• 1/3 cup grated Parmesan cheese
• 2 tsp Worcestershire sauce
• 1/4 cup olive oil
• 2 Tbsp fresh lime juice
• 1/3 cup milk
• 1-2 cloves of garlic, to taste
• 2 tsp Dijon mustard
• Freshly ground pepper to taste

Preparation

Step 1

Combine all ingredients in a blender. Purée until smooth and creamy.
