  • 1 pound of penne pasta
  • salt and pepper
  • 4 chicken breasts
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic
  • 3/4 cup chicken broth
  • 3/4 cup dry white wine (pinot gregio)
  • 1 bag baby spinach
  • 2 cups grape tomatoes
  • 4 oz parmesan cheese shaved



Step 1

Cook pasta al dente
heat butter and oil oil high and add chicken for 2 minutes then turn over for 1 minute. then remove meat when done. turn to medium heat and add garlic and pour in wine and broth and bubble and reduce to half. turn off and add spinach and tomato to pasta and meat and cheese. mix well.
