Ingredients

  • 1/3 cup evoo
  • 3-4 cloves of garlic, cut into slivers
  • 1 1/2 lbs shrimp, peeled,rinsed and dried
  • salt and freshly ground pepper
  • 1 tsp ground cumin
  • 1 1/2 tsp hot paprika
  • chopped fresh parsley for garnish

Preparation

Step 1

warm the oil in a large ovenproof skillet ot heatproof baking pan over low heat. there should be enough evoo to cover the bottom of the pan; don't skimp. add the garlic and cook until it turns golden,just a few minutes
raise the heat to medium high and add the shrimp, some salt and pepper, the cumin and paprika. stir to blend and continue to cook, shaking the pan once or twice, until they are pink all over and mixture is bubbly. 5-10 minuters. garnish and serve immediately.
