Ingredients
- 2 Tbsp butter
- 1 C Onion, minced
- 1 Celery Rib, minced
- 1 Tsp Garlic
- 1 Carrot, minced
- 1/2 C Green Onions, chopped
- 2 tsp of both Salt & pepper
- 2 tsp Worcestershire Sauce
- 2/3 C Ketchup
- 1.5 Lb Ground Beef
- 3/4 Lb Ground Pork Sausage (spicy or mild)
- 1 C Breadcrumbs
- 2 Lg Eggs, beaten
- 1/3 C Parsley (fresh)

Preparation
Step 1
Preheat oven to 350 degrees.
In a skillet, melt the butter. Add the onion, celery, carrot, garlic, and green onions. Cook until the onions are translucent and the carrots are tender. Add salt and pepper, worcestershire sauce, and 1/3 C of the ketchup. Cook for 1 more minute and remove from the heat.
In a large bowl combine the beef, pork, eggs, breadcrumbs, vegetables, and parsley.
Press the meatloaf into a loaf pan and cover with the remaining ketchup (2/3 C).
Bake the meatloaf for 60 minutes, or until the center reaches 155 degrees. Let the meatloaf stand for 10 minutes before serving.
