Sundried Tomato Pesto

Ingredients
- 1 cup fat free chicken broth
- 1 cup sundried tomatoes halves--not in oil
- 1 cup walnuts
- 1/2 cup fresh parsley
- 2 T. parmesan cheese
- 8 oz cooked pasta

Preparation
Step 1
Bring chicken broth to a boil over high heat. Remove, add tomatoes, set aside 5 minutes. Drain tomatoes, reserve liquid. Put tomatoes, parsley, walnuts, parmesan cheese and 1/2 cup reserved liquid in blender and process until smooth. Ad 2-4 T. liquid as needed. Toss with pasta.
Makes 8-2 T. servings
