Ingredients
- 1 boneless pork shoulder butt roast
- (3-4 lbs.)
- 1 jar (12 oz.) apricot preserves
- 1 large onion, chopped
- 1 Tbsp. soy sauce
- 2 Tbsp. Dijon mustard

Step 1
Cut pork roast in half. Place in sloe cooker. Combine the preserves, onion, soy sauce and mustard and pour over roast. Cover and cook on low for 8-10 hrs. or until meat
is tender. I didn't cut roast in half and it was very tender in 8 hrs. Serve on buns if desired. Very tasty.
