Ingredients

  • 1

    boneless pork shoulder butt roast

  • (3-4 lbs.)

  • 1

    jar (12 oz.) apricot preserves

  • 1

    large onion, chopped

  • 1

    Tbsp. soy sauce

  • 2

    Tbsp. Dijon mustard

Directions

Cut pork roast in half. Place in sloe cooker. Combine the preserves, onion, soy sauce and mustard and pour over roast. Cover and cook on low for 8-10 hrs. or until meat is tender. I didn't cut roast in half and it was very tender in 8 hrs. Serve on buns if desired. Very tasty.
