Ingredients

  • 3 cups 3 cups unbleached, all-purpose flour
  • 3/4 cup 3/4 cup firmly packed light brown sugar
  • 1/2 cup 1/2 cup unsalted butter, cold, cut into pieces
  • 1/4 teaspoon 1/4 teaspoon salt
  • 8 ounces 8 ounces plain Greek yogurt, regular or low fat
  • 3/4 cup 3/4 cup seedless raspberry or blackberry jam
  • 1 cup 1 cup flaked coconut
  • 3/4 cup 3/4 cup walnuts, toasted, coarsely chopped
  • 1/2 cup 1/2 cup dried currants
  • Combination of powdered sugar and unbleached flour for dusting counter
  • Powdered sugar for dusting warm cookies

Preparation

Step 1

1. Into Vitamix container add flour, sugar and butter pieces. Secure lid.
2. Pulse on Variable 8 five times. Stop machine and scrape sides and under blades.
3. Secure lid. Repeat process two more times.
4. Remove mixture from container into a large bowl.
5. Add yogurt and mix with a stiff spatula or wooden spoon to combine.
6. Once most of yogurt has been combined, turn dough out onto a lightly floured work surface and incorporate all remaining flour to make a soft dough.
7. Gather mixture into a ball and divide into three portions.
8. On a lightly sugared/floured work surface, roll out one of the doughs into a 9 inch square.
9. Spread with a few Tablespoonfuls of the jam.
10. In a bowl, combine the coconut, walnuts and currants. Sprinkle a portion atop spread jam.
11. Roll up into a spiral; pinch edge to seal.
12. Wrap in plastic wrap and repeat process with remaining dough and filling.
13. Chill for 3 to 4 hours or until firm enough to slice.
14. Heat oven to 400°F.
15. Using a serrated knife, cut rolls into 1/3 to ½ inch thick slices and place onto parchment paper lined cookie sheets.
16. Bake for 15 to 20 minutes or until tops are lightly golden brown.
17. Transfer cookies to wire rack.
18. Cool completely on a wire rack.
19. Sprinkle lightly with sifted powdered sugar before serving.
