Fresh tomato sauce

There's nothing gentle about the flavor of this tomato sauce. It starts with fresh tomatoes and a fairly amazing amount of garlic and ends as a wonderful sauce. You can peel and seed the tomatoes if you like, but I usually don't bother in this recipe.

Ingredients
- 1/4 cups olive oil
- 1/3 cup paper-thin slices garlic
- 8 cups tomato chunks (about 3 pounds)
- 1/4 cup tomato paste
- 1/4 tsp. salt, or to taste
- ground black pepper to taste

Step 1
1. In a 4-quart pot, heat the oil over medium-high heat. Add the garlic; cook, stirring, until softened, about 30 seconds.
2. Add the tomatoes; cook until the tomatoes give off enough liquid so that most of the pieces are submerged. Stir in the tomato paste. Bring to a boil. Reduce heat to medium and cook, uncovered, 50 minutes or until thickened. Stir in the salt and pepper.
VARIATION: Marinara Sauce: Stir in 1/4 cup shopped parsley, 1 1/2 tsp. dried oregano, 1 tsp. dried basil, and 1/4 tsp. dried thyme when you add the tomatoes.
