Creamy Caesar Salad Dressing

"I adapted this from a recipe I found online. My family loves zippy, garlicky Caesar dressing and this fits the bill. I use fresh raw egg and have never had a problem. It's best to make the dressing ahead of time and let it meld if you have the time. Excellent with grilled chicken pieces added too. Enjoy!"
Ingredients
- 1 cup mayonnaise
- 1 eggs
- 1/2 cup grated parmesan cheese
- 2 tablespoons water
- 2 tablespoons olive oil
- 1 1/2-2 tablespoons fresh lemon juice
- 1/2-1 tablespoon anchovy paste or 1 teaspoon Worcestershire sauce
- 2-4 garlic cloves ( see note)
- 1/2 teaspoon ground pepper
- 1 head romaine lettuce, washed, dryed and torn into 1-inch, pieces
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- Lemon slices
Preparation
Step 1
Place the first 9 ingredients in a blender, blend on high for 1 minute, taste and adjust as needed.
Put the lettuce in a large bowl with the croutons and parmesan cheese.
Pour most of the dressing over the salad and gently toss, add extra dressing if needed. Serve with lemon slices on the side.
NOTES:
If making a smaller salad extra dressing will last for more than a week in the frig.
Since posting this several people have said it needed more garlic - garlic can vary in intensity - so start with 2 cloves, blend, then taste to see if it needs more. I've love strong garlic and this recipe usually has a bit of a bit.

Guilty pleasures! I love salads but don`t load the dressing. I did with this one and I enjoyed every bit! I didn`t top with the other 1/2 cup grated cheese. Did load it with fresh cracked pepper. I used fresh garden greens and added a sliced cucumber. And yes I did use anchovy`s. A must for Caesar dressing. Thank you!
Very nice! My first attempt at caesar salad so this was fun. I made the recipe spot on except I subbed lemon pepper for the black pepper (great sub, I must say) and I used the anchovy paste option and threw in a dash of worcestershire as well. That said, I felt it was missing something and I'm not totally sure what - perhaps a little extra lemon juice and a few more dashes of worcestershire. I will certainly try this recipe again. I topped mine with a chicken breast and my hubby's with shrimp. Thanks for posting!
This was good. I used nonfat sour cream to cut down on the fat. I would add more garlic next time also.
This is a great salad, and I used the anchovy paste (which my father greatly appreciates). Awesome! Since my family is looking to eat more vegetables we are going to include this recipe more often.
Very nice. I think I'll add another clove of garlic next time. The flavor didn't come through as much as I would have liked.
Yummy! This is a great salad. I also used Egg Beaters in place of the raw egg.
Great dressing! Made a couple changes to the dressing . . . substituted 1/4 cup of egg beaters for the raw egg, and used both anchovy paste and worcestershire sauce. Since this was our dinner I added additional veggies.
