Smoked Pork Tenderloin

Ingredients
- 2 pork tenderloins
- 2 tsp. oilive oil
- 1 onion, chopped
- 1 jalapeno pepper, seeded and minced
- 1 clove garlic, minced
- 1/2 C molasses
- 1/2 C cider vinegar
- 1/4 C dijon mustard
- 1 Tbl. soy sauce

Preparation
Step 1
Heat oil in saucepan. Add onions, jalapeno pepper and garlic; saute until softened, 2-3 minutes. Add molasses, vinegar, mustard and soy sauce. Simmer for 5 minutes, stirring occasionally. Let the sauce cool. Marinate the tenderloins in half of the sauce in shallow dish in refrigerator for up to 8 hours, turning occasionally. Reserve the remaining sauce for basting. Smoke tenderloins for about 25 minutes or until internal temperature registers 150F. When done grill the smoked tenderloins, brushing with the reserved sauce until glazed, about 2 minutes per side.
