- Whatever type of rice you are using.
- Butter to taste.

Start with long grain white, jasmine or basmati rice, rinse it very well and add water or stock. For every cup of rice use 1 3/4 cups of liquid. Add a pinch of sea salt and a bay leaf and bring it to a boil in a heavy bottom pan. Turn the heat down to low and cover with a tight lid.
Allow to simmer for 11 minutes and remove from flame. Let it sit covered for 15 minutes. Remove lid and stir in 1 tablespoon of butter. Fluff the rice with a fork and serve. At this point if you want to dress it up a bit, you may add some chopped fresh herbs, lemon zest, lime juice etc.
