Ingredients

  • 1 pkg (20oz) frozen broccoli
  • 1/2 cup chopped onion
  • 1/4 tsp salt
  • 1/2 cup uncooked minute rice
  • 1/2 stick butter
  • 1 can cream of chicken soup
  • 1 can milk
  • 3/4 cup grated or diced Velveeta cheese
  • 1 role Ritz crackers, crushed

Preparation

Step 1

1. Preheat oven to 350 degrees
2. Sauté onion in butter. Cook and drain broccoli, mix together
3. In casserole dish, blend soup and milk, rice, salt and cheese. Add broccoli and onions
4. Sprinkle top with crumbs. Bake 1 hour
