Fresh Strawberry Cobbler

  • Filling:
  • 4 cups medium strawberries, hulled and quartered
  • 1 cup sliced fresh peaches
  • 1/3 cup sugar
  • 1/3 cup orange juice
  • 1 tbsp cornstarch
  • 1 tbsp fresh lime juice
  • Biscuit Topping:
  • 1 cup all purpose flour
  • 3 tbsp sugar, divided
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp butter, cut into pieces
  • 1/2 cup buttermilk

Step 1

1. Preheat oven to 350 degrees
2. To prepare the filling, combine strawberries and next 5 in a medium bowl, stir well. Spoon strawberry mixture into a 10 inch deep-dish pie plate or 11x7 inch baking dish coated with cooking spray
3. To prepare the biscuit topping, combine flour, 2 tbsp sugar, baking powder and salt. Add butter working with your fingers until mixture resembles coarse meal. Drop dough by tbsp over strawberry mixture. Sprinkle with remaining sugar
4. Bake 25 minutes or until strawberry mixture is bubbly and biscuits are browned
