- 1 1/2 cups yellow cornmeal
- 1/2 cup flour
- 3 T. sugar
- 2 tsp baking powder
- 1 1/2 tsp salt
- 3/4 cup canned cream corn
- 1/3 cup milk
- 1 large egg, lightly beaten
- 1/2 small onion finely chopped
- vegetable oil to fry
In a large bowl whisk cornmeal, flour, sugar, baking powder and salt.
Add creamed corn, milk, egg and onion. Stir until just combined.
Heat oil to 350 degrees. Drop spoonfuls of batter into oil. Fry, turn after they rise to the top and are brown--5 minutes.
Drain on paper towels, serve warm.
