Ingredients

  • BASE AND TOPPING
  • 1 1/2 c. oats
  • 1/2 c. flour
  • 1/3 c. packed brown sugar
  • 1/4 t. baking soda
  • 1 /8 t. salt
  • 6 t. butter, melted
  • FILLING
  • 2-2 1/2 c. blueberries
  • 2 T. sugar
  • 1 T. cornstarch
  • 1 t. lemon juice

Preparation

Step 1

1. Preheat oven to 350 degrees F.

2. Line an 8" square pan with foil, letting ends extend beyond pan, 2".

3. In a large bowl, mix oats, flour, brown sugar, soda and salt.

4. Add melted butter and stir with fork til moistened. Reserve 1/2 for topping.

5. Press remaining mixture evenly and firmly over bottom of ungreased, foil-lined pan.

6. Bake crust 12 minutes.

7. In a small saucepan, stir berries, sugar, cornstarch and lemon juice over medium heat til simmering.

8. Simmer mixture, stirring occasionally til juices are clear, about 2 minutes.

9. Stir berry mixture over crust.

10. Sprinkle reserved crumb mixture over top.

11. Bake 30 minutes.

12. Let cool completely in pan. then lift out using foil handles.
