Ingredients

  • 2 (15 oz) can black beans
  • 1 cup onion, chopped
  • 2 bay leaves
  • 4 cloves garlic, minced
  • 14 oz can diced tomatoes
  • 1/2 cup corn
  • Cooked white rice
  • 1/4 cup jack cheese
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Red pepper flakes

Preparation

Step 1

1. Sauté 3/4 cups onion, garlic and bay leaves in olive oil
2. Add black beans, tomatoes, cumin, chili powder, red pepper and corn
3. Simmer 10 minutes.
4. Serve over rice. Top with onion and cheese.
