Ingredients

  • 1 18-1/4 oz yellow cake mix
  • 1 15 oz can pumpkin
  • 2/3 c sugar
  • 2 eggs
  • 1/2 c egg substitute
  • 1/3 c water
  • 1/4 c unsweetened applesauce
  • 1-1/2 tsp cinnamon, divided
  • 1/4 tsp nutmeg
  • 1-1/2 c powdered sugar
  • 1/2 tsp vanilla
  • 1-2 T skim milk

Preparation

Step 1

Combine cake mix, pumpkin, sugar, eggs, egg substitute, water, applesauce, 1 tsp. cinnamon and nutmeg. Beat on low for 30 seconds. Beat on medium for 2 minutes. Pour into a 10 inch bundt pan coated with cooking spray. Bake 350 degrees for 65-75 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes, remove from pan.
In a small bowl, combine the powdered sugar, vanilla, remaining cinnamon and enough milk to achieve desired constancy to drizzle.
