Easy Salsa

Not quite as easy, but even tastier, is this: start with 2 cups finely chopped fresh tomatoes instead of the canned.

Ingredients

  • One 14 1/2-ounce can whole peeled tomatoes, undrained
  • One 4-ounce can chopped green chiles, undrained
  • 1/2 cup sliced scallions (white and green parts)
  • 1/2 cups chopped onion
  • 1/4 cup chopped fresh cilantro
  • 2 Tbs. fresh lime juice
  • 2 cloves garlic, minced
  • 1/4 tsp. ground cumin
  • 1/4 tsp. sugar
  • 1/4 tsp. salt, or to taste
  • 1/2 cup chopped fresh tomatoes

Preparation

Step 1

1. Place all the ingredients in a blender or food processor. Cover and pulse until finely chopped
2. Let stand at least one hour for the flavors to meld.

VARIATION: Omit the canned chiles and substitue 1 or 2 seeded, diced fresh jalapenos.
