Ingredients

  • 2 cups sugar
  • 2 sticks room temperature butter
  • 2 eggs
  • 1 tsp pure vanilla
  • 1 tsp salt
  • 1 tsp xanthum gum
  • 2 1/2 cups gluten-free flour (I use King Arthur brand.)

Preparation

Step 1

1.Preheat oven to 350°. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs and vanilla. In a separate bowl combine the salt, xanthan gum, and flour and then gradually add to creamed mixture. Mix until combined.
2.Place covered bowl in refrigerator for a few hours to chill. Once chilled roll out dough onto floured surface and cut with cookie cutters. Bake on parchment paper at 350° for 8-10 minutes or until lightly browned on edges.
