Sweet Potato Mac and Cheese

Ingredients

  • 1 lb elbow macaroni
  • 3 tbsp olive oil
  • 1/3 cup flour
  • 1 cup mashed sweet potato
  • 3 1/2 cups nondairy milk
  • 2 tsp sea salt
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp soy sauce
  • 1 tsp lime juice
  • 2-3 tsp chopped fresh rosemary

Preparation

Step 1

Cook macaroni.
Medium saucepan: make a roux by whisking olive oil and flour over medium heat x 3-5 mins.
Add remaining ingredients except rosemary.
Reduce heat to low and simmer until sauce thickens. Whisk until smooth (some pulp may remain).
Combine macaroni, sauce and rosemary.
