  • 3 eggs, separated
  • 1 1/2 C. flour
  • 1/4 C. sugar
  • 2 C. (16 oz.) plain yogurt
  • 1/4 C. butter, melted
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Step 1

In small mixer bowl, beat egg whites at high speed, scraping bowl
often, until stiff peaks form (1-2 min.); set aside. In large mixing
bowl combine egg yolks and remaining ingredients. Beat at medium speed,
scraping bowl often, until well mixed (1-2 min.). By hand, fold in
beaten egg whites.
Heat griddle to 350ºF. or until drops of water sizzle. For each
pancake, pour 1/4 C. batter onto greased griddle. Bake until bubbles
form (about 1 1/2 min.) turn, continue cooking until underside is light
brown (about 1 1/2 min.). Serve warm. Makes 18 pancakes.
