Ingredients

  • 3/8 teas salt
  • 1/4 teas ground coriander
  • 1/4 teas freshly ground black pepper
  • 1/8 teas ground cinnamon
  • 1/8 teas ground nutmeg
  • 1 lb pork tenderloin cut crosswise into slices
  • cooking spray
  • 2 tbls butter
  • 2 cups thinly sliced unpeeled braeburn or gala apples( pears works well)
  • 1/3 cup thin sliced shallots
  • 1/8 teas salt
  • 1/4 cup apple cider
  • 1 teas fresh thyme
  • 1/8 teas ground nutmeg

Preparation

Step 1

Heat large cast iron pan over med-high heat. combine 3/8 teas salt,coriander,pepper,cinnamon and nutmeg in small bowl, sprinkle mixture over pork and gently rub over pork. Coat pan with cooking spray. Add pork and cook until desired doneness. Remove pork and keep warm

Melt butter in pan. Add apples,shallots and 1/8 teas salt, swirl to coat pan. Cook 4 minutes until apples begin to brown. Add cider to pan , cook 2 minutes or until apples are crisp tender. Stir in thyme. Serve apple mixture with pork.
