  • 1/4 cup evoo
  • 2 onions finely choppped
  • 2 green bell peppers seeded, ribs removed and diced
  • 2 ribs celery, finely chopped
  • 3 cloves og garlic
  • 1 cup long grain white rice
  • 8 oz tomato sauce
  • 2 cups water
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp cumin

Step 1

heat evoo in a large frying pan over medium heat, then add onions,celery and green peppers and saute
until soft about 3 minutes. add the garlic and cook another minute while stirring. add rice to the mix. add tomato sauce and the water carefully season with salt and pepper, and add the cumin,if using. bring to a boil, lower heat, cover, and simmer for 20 to 25 minutes until rice is done, stirring once or twice
