Orange Nut Bread

Ingredients
- 2 cups sifted flour
- 1 cup sugar
- 1 tsp baking powder
- 2 tsp vanilla
- 1/2 tsp salt
- 1 egg, beaten slightly
- 2 tbsp. butter
- 1/2 cup coarsely chopped nuts
- 1/2 cup boiling water
- 1/3 cup fresh orange juice
- 2 tbsp. grated orange rind (about 1 orange)

Step 1
Grease loaf pan. Measure dry ingredients into sifter. Melt butter in boiling water. Blend in orange rind and juice, sugar, vanilla and egg. Sift dry ingredients over orange mixture; add nuts. Stir just until all flour is dampened. Batter will be lumpy. Pour batter into greased pan. Bake 1 hour at 350 degrees or until toothpick comes out clean. Remove from pan and cool on rack. Wrap in waxed paper and store in bread box.
