Ingredients

  • crust:
  • 12 graham crackers, rolled into crumbs
  • 3 tbsp. sugar
  • 4 tbsp. butter, softened
  • cake:
  • 3 (8 oz.) bricks cream cheese
  • 2 c. sour cream
  • 1 c. sugar
  • 5 eggs, separated
  • 1 tsp. vanilla
  • 1 tsp. lemon juice

Preparation

Step 1

1. mix crust ingredients and press into sides and bottom of springform pan.
2. beat egg whites until stiff. soften cream cheese, then add sugar and cream until smooth. add unbeaten egg yolks and mix. add sour cream, beat until smooth, add vanilla and lemon juice.
3. fold in stiffly beaten egg whites. bake in crumb lines pan for 1 hour at 300F. do not move pan. after 1 hour, turn off oven and keep cake in oven 1 hour with door closed then 1 hour with door open. take pan our of oven. cool then cover with fruit if desired.
