Meat Loaf Cupcakes

I love finding strange and fun items to cook. This one seems silly, but tastes good and can make for an interesting dinner with recalcitrant kids who don't like meatloaf! Though I might actually sprinkle bacon bits instead of chives at the end. Maybe try garlic mashed potatoes.

Ingredients

  • 3

    medium potatoes, peeled and chopped

  • 1 1/2

    lbs ground beef

  • 1/2

    cup finely chopped onion

  • 1/3

    cup old-fashioned oats

  • 1

    egg

  • 2

    tblsp chopped fresh rosemary

  • 1/2

    cup milk

  • 2

    tblsp butter

  • 1

    tsp salt

  • black pepper

  • 1/4

    cup snipped chives

Directions

Preheat oven to 350. Place potatoes in medium saucepan; cover with water. Bring to a boil; cook 25-30 minutes or until potatoes are tender. Meanwhile, combine beef, onion, oats, egg and rosemary in large bowl; mix well. Divide mixture among 10 muffin cups. Bake 25 minutes or until cooked through. Beat potatoes, milk, butter, salt and pepper in large bowl with electric mixer at medium speed 3 minutes or until smooth. Place potato mixture in large piping bag fitted with large star tip. Remove meat loaf cupcakes to serving platter. Pipe mashed potatoes on top for frosting. Sprinkle with chives.
