Ingredients
- 1 lb. hamburger
- 1 1/4 cup chopped onion
- 1 1/4 cup shredded carrots
- 1 1/4 cup diced celery
- 2 tsp basil
- 2 tsp parsley
- 8 tbs butter
- 6 cups chicken broth
- 8 cups peeled and diced potatoes
- 1/2 cup flour
- 1 box Velveeta
- 3 cups milk
- 1 1/2 tsp salt
- 1 tsp pepper
Preparation
Step 1
Brown hamburger in 3 qt saucepan. Drain and set a side. In same pan add 2 tbs butter and add onion, carrots, parsley, basil and celery saute until tender. Add broth, potatoes and beef bring to a boil. Reduce heat cover and simmer 10-12 minutes until potatoes are tender. In small skillet melted remaining butter and add the flour. Cook and stir for 3-5 minutes or until bubbly. Add to soup and bring to a boil. Reduce heat to low stir in cheese, milk, salt and pepper until cheese melts.
