Ingredients
- 2 c flour
- 1 T sugar
- 2 tsp baking powder
- 1 tsp salt
- 2 1/3 c buttermilk
- 2 eggs
- 2 T butter, melted
- 2 1/2 c cooked macaroni (1 1/4 c dry)
- 1 1/2 c grated cheddar
Preparation
Step 1
In a large bowl, whisk flour, sugar, baking powder and salt. In separate bowl, whisk together buttermilk, eggs and butter. Add the liquid ingredients to the dry ingredients and whisk until just combined. Using a spoon, fold in the macaroni and cheddar. Preheat a skillet. Make pancakes and flip. Serve with maple syrup.
