  • 1 egg yolk
  • 1 tsp water
  • 3/4 cup olive oil
  • 1 T Dijon mustard
  • 1/4 cup balsamic vinegar
  • salt and pepper

Step 1

1. Place yolk and water into a stainless steel bowl.
2. Warm over simmer water while whisking constantly until warm to the touch.
3. Whisk in mustard and vinegar.
4. Gradually whisk in the olive oil.
5. Season.
** A vinaigrette can be as simple or fancy as you would like. Add chopped shallots,fresh herbs or anything else that will compliment the contents of your salad.
** A vinaigrette made without egg yolk is not as stable and will separate soon after making it. Simply shake the container or whisk to emulsify immediately before service.
