Citrus grilled Cornish game hen

Ingredients
- 4 Cornish game hens
- 1/2 cup lime juice
- 1/2 cup orange juice
- 3 cloves garlic
- 2 tbsp olive oil
- Salt peppa
- 2 bunches of watercress stemmed for garnish

Step 1
1. Put the hens in allarge shallow glass or ceramic bowl. In another bowl, whisk together the lime juice and orange juice, garlic, olive oil, and salt and pepper to taste. Pour the marinade over the hens and turn to coat them thoroughly. Cover the bowl with plastic wrap and refrigerate the hens for 4 to 6 hours, turning them occasionally.
2. Peheat the oven to 350 degrees and prepare a gas or charcoal grill.
3. Transfer the hens and 1/2 marinade to a shallow baking pan. Reserve remaining marinade for basting. bake the hens for 20 minutes and remove them from oven.
4. When fire is medium hot or coals have a light coating of ash, grill the hens, basting them often with remaining marinade, until nicely browned and juices run clear, about 10 minutes per side.
5. Scatter the watercress to cover a large platter and place the hens over it. Serve that shit quick so it's hot.
