7-up Orange Salad

Ingredients

  • 2 small packages orange jell-o
  • 2 cups boiling water
  • 1 can 7-Up
  • 3 bananas, sliced
  • 2 cans mandarin oranges, drained
  • 1 can (20-ounce size) crushed pineapple, drained; reserve juice
  • Topping***
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 egg
  • 1 cup reserved pineapple juice
  • 1 carton (8 ounce size) Cool Whip
  • 1/2 cup nuts, chopped (optional)

Preparation

Step 1

Dissolve jell-o in boiling water. Add 7-Up and chill until mixture reaches thick and syrupy stage. Add fruit. Pour into large glass serving dish or 10 x 13 pan. Chill until firm.

For the topping: combine the sugar, flour, egg, and reserved pineapple juice. Cook, stirring constantly until thick. Remove from heat and
set aside to cool. Fold in the Cool Whip; spread over top of the firm jell-o and sprinkle with the nuts. Refrigerate.
