ITALIAN FISH BAKE

This is a very easy, low-fat recipe that can be put together in a snap. The veggies can be changed to your liking - try green peppers and celery. Add a side of pasta or rice, and a salad for a complete meal.

Ingredients

  • 2 lbs. cod or haddock filets
  • 1 small onion, sliced
  • 1-2 small zucchini, halved, sliced
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon granulated garlic
  • 1.5 teaspoons California basil
  • 1/2 teaspoon marjoram
  • 1 {15oz}can tomato sauce
  • 1 can diced tomatoes with juice

Preparation

Step 1

Preheat oven to 350°F.

Place fish filets in an ungreased 9x13” glass baking dish. Put sliced onion and zucchini around the fish. Sprinkle pepper, garlic, basil and marjoram over fish and vegetables. Pour tomato sauce and diced tomatoes with juice over the top.

Bake 45-60 minutes or until the fish is white and flakes when cut with a fork. Periodically baste the fish with the pan juices so the tomato sauce doesn't dry out on top.
