Ingredients

  • 20 ounces of fresh, washed, spinach
  • 2 garlic cloves, diced
  • 2 (14 ounce each) cans of artichoke hearts, any size, drained and chopped
  • 1 1/2 cups of shredded parmesan cheese
  • 3/4 cup of sour cream
  • 3/4 cup mayonnaise
  • 1 tablespoon hot sauce, more if you like it spicy
  • zest of 1 lemon
  • crackers or pita chips for dipping
  • cooking spray for dish

Preparation

Step 1

Preheat oven to 375. Blanch spinach then drain and squeeze out as much water as possible. In a large bowl, mix together spinach, garlic, and zest of 1 lemon. Add chopped up artichoke hearts, 1 cup of parmesan cheese, sour cream, mayonnaise and hot sauce. Mix well. Spray casserole dish with cooking spray and place mixture into dish. Bake for 30 minutes. Sprinkle 1/2 cup of parmesan cheese on top of dish and bake for 5 more minutes or until the cheese is melted. Good with crackers or pita chips, or bread, or on a spoon...
