Ingredients

  • 3 ounce package line Jell-O
  • 1 1/3 cup sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cup oil
  • 3/4 cup orange juice
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • five eggs slightly beaten
  • for glaze: 1/2 cup key lime juice, 1/2cup confectioners' sugar
  • For icing; 1/2 cup butter 8 ounces cream cheese 1 pound box of powdered sugar

Step 1

Preheat oven to 350°, grease and flour 9 x 12 pan. Mix Jell-O, sugar, flour, salt, baking powder and soda. Mix well. Add oil, orange and lemon juice, vanilla and eggs. Mix well. Pour into pan and bake 35 to 40 minutes. Test for doneness by lightly touching or inserting toothpick. Cool 5 mins then turn out onto rack.

Make glaze of key lime juice and confectioners' sugar and while cake is still hot pierce cake with fork and pour glaze over cake. Make icing and spread on top and sides of cake. Note, you can also bake in three each 9 inch pans.
